3 Dinner Recipes

Hello Sweets,

I am dangerously balancing my almond milk chai latte on my lap as I write this, I had a lovely morning yesterday going to the Farmers Market with my lovely Mumma (who I think is the reason why I love healthy food and organic markets) and my lovely boy too! I got tiny beautiful pears and apples, spinach and mushroom pasta, herb mix, flowers, and baby eggplants, this inspired me to share some of my favourite dinner ideas with you.

These ideas are fast, vegan and mostly very good for you too. Let’s go! All recipes serve to 2 to 3 people depending on hunger levels, these can all be easily doubled or even tripled as well for meal prep. I have included amounts for the garlic flakes as garlic is such a personal taste. *Photos my own or via google images.

Cauli Mash with Mushroom Gravy

If you like comfort food or its cold where you are, then this recipe is for you, I like to serve it with a side salad and sometimes the vegan sour cream.

  • 1/2 head cauliflower
  • 3 large red potatoes
  • 1 tablespoon olive oil or vegan butter
  • 400g brown swiss mushrooms
  • 1 cup fake chicken stock
  • 2 tablespoons plain flour
  • Garlic flakes
  • Onion flakes
  • Green veggies to serve.

Finely chop and peel your potatoes, steam till tender and set aside, do the same with the cauliflower, then mash the cauli and the potato together with a little extra butter if you like it creamy.

In a large pot over a medium heat, fry the mushrooms in the olive oil or butter along with garlic and onion flakes until golden and fragrant, then stir in the chicken stock, before gradually adding in the flour, and stir constantly until the mixture is thick and gravy like.

Reheat the mash, and top with the mushrooms, it’s as simple as that. Serve with green veg, vegan cheese, sour cream and herbs.

Roast Veggies with Cheese Cashew sauce 

Good roast veggies are one of my favourite things and when topped with the cheesy sauce it’s next level. You need to start this the day before to soak the cashews overnight.

  • 1 red onion
  • 2 carrots
  • 1 sweet potato
  • 3 red potatoes
  • 1 red capsicum
  • Olive oil
  • Garlic flakes
  • Salt and Pepper
  • 1.5 cups cashews
  • 2 tablespoons nutritional yeast
  • Juice and zest of one lemon

Soak the cashews overnight in 2 cups of water. Begin by preheating your oven to 180 degrees, peel and chop the carrots into cubes, chop the potatoes into quarters, chop the sweet potato into squares, peel and chop the onion into long thin slices, and deseed and thinly slice the capsicum.

Parboil the carrots, and potatoes together for around 7 minutes until almost soft. Spread all the veggies( including the parboiled ones) on to two large trays, drizzle with the olive oil, salt, pepper and garlic flakes and cook for around an hour, until the veggies are gorgeously crisp and golden.

While the veggies cook, prepare the sauce by whizzing together the cashews in their water, the nutritional yeast, lemon juice, garlic flakes and seasoning in a blender until creamy. Top the veggies with the sauce, and any vegan cheese if you like.

Lentil Soup with ‘ Bacon’ 

If I have had a bad day or need nourishment this is one of my go-to recipes, as its quick, delicious and filling. Crunchy sourdough bread is so lovely when paired with this. I have included a recipe for coconut bacon in the links or I buy the brand in the photos.

  • 1 tablespoon vegan butter
  • 1 red onion
  • Garlic flakes
  • 2 celery sticks
  • 2 carrots
  • 1 jar of passata
  • 5 cups of vegetable stock
  • 1 cup of raw red lentils
  • Vegan bacon

Finely chop all the vegetables (peel the potatoes and carrots if you like). In a large soup pot (with a lid) over a medium heat fry the onion, and onion flakes in butter until the onion is softening.

Then add in the celery, and carrots, cook the veggies for five minutes and then add in the passata, lentils, and veggie stock. Cook for 30 – 40 minutes with a lid on top, until the vegetables are tender, and the lentils cooked.

Top with the bacon and serve with crusty bread and butter.
