Choc Chip Muffins

Hello Lovelies.

I hope that this post finds you well and happy.  These muffins are inspired by my boyfriends beautiful 91 year old grandma who inspires me on a daily basis by being her, she is a mean baker and general blessing to my world. She makes these incredible cookies filled with chocolate chips, nuts, and insane deliciousness.

These muffins aren’t fancy, or life changing, but they are comforting, chocolatey, and perfect with a big mug of tea and a Netflix show (I would recommend Mind Hunter or Veronica Mars). These also taste exactly like a gooey chocolatey cookie.

Muffins and many other bakes can go from beautiful and golden to black, in a matter of moments so always check muffins on time.

* Mine also look darker than usual as I only had dark brown sugar.

Choc Chip Muffins

2 cups plain flour ( you can use wholemeal if you want to be a fibre bunny)

2 teaspoons baking powder

Small pinch of salt

1/3 cup brown sugar

1/3 cup natural sugar

2/3 cup regular or soya milk

1/2 cup regular or vegan butter

2 regular eggs or flax eggs

Preheat Oven to 200c or 400F, then grease and line 12 muffin trays

In a large bowl, stir together flour, sugars, baking powder, and salt.

Then in another medium bowl, stir together milk, eggs, butter, and vanilla until blended. Make a well in the centre of the dry ingredients, and slowly add in the milk mixture and lightly stir until well combined.

Gently fold in the choc chips, and walnuts.  Spoon batter into prepared tin using a small wooden spoon and spatula.

Bake for 15 minutes, or until a cake tester/skewer inserted in to the centre of one of the muffin comes out clean.

Cool for ten minutes on a wire rack, before serving with extra choc chips, coconut whipped cream, cups of tea or berries.
