These are gooey, chocolatety, nutty and comforting. I like to have mine with a cup of New York Breakfast tea from T2, while cuddling my dog and watching Netflix. I am no baking genius but I find it a lovely thing to do when I have the calories and time to to do so.
Tips for Baking Cookies
Use good quality vanilla essence rather then imitation stuff.
Expieriment with vegan butter and eggs to find the textures you like the most.
Regularly check the cookies as they burn easily and use a kitchen timer.
Double check that you Choc chips are actually vegan.
Butter tastes a lot better in baked goods then oil as it lends to a lighter texture.
If you mix chocolate chips too vigorously they will break up and turn your cookies muddy.
Choc Chip Nutty Cookies
2 Flax Eggs
1 cup vegan butter or coconut oil
1 teaspoon vanilla essence
1/2 cup soft brown sugar
1/2 cup caster sugar
2 cups self raising flour
1.5 cups vegan dark chocolate chips
1 cup dry roasted almonds
Preheat oven to 180* and line two flat baking trays with baking paper.
Melt your butter for around 20 seconds until softened then add in the two types of sugar, and the vanilla essence before beating in your two flax eggs until well combined. I use a large mixing bowl, and wooden spoon for this.
Sift your self raising into the butter mixture and slowly stir until no tiny bits of flour are visible.
Finish by gently folding in your chopped almonds and choc chip bits. Place heaped teaspoons onto your prepared trays and bake for 10-12 minutes until golden brown.
